The secret to Jacquie’s luscious double chocolate cake

 “I will be happy to share the secret of all our baked goods, both at the Café and those we serve through our catering company. As simple as it sounds, it truly is the ingredients.”

“As a baker, when you only use farm fresh eggs, dairy creamery butter, and straight from the mill, non-processed unbleached flours, it makes a huge difference in the richness of the flavor of our cakes, cookies, breads, and muffins. We always use unprocessed naturally produced spices – never flavorings. You can really taste the freshness of natural ingredients.”

The Perfect Chocolate Cake

  • 1 C. unsweetened cocoa
  • 2 C. boiling water (or fresh brewed coffee for a darker, richer cake)
  • 1 ¾ C. fresh-milled, unbleached flour
  • 1 C. fresh-milled, all natural almond flour
  • ½ t. ground salt
  • 2 t. baking soda
  • ½ t. baking powder
  • 1 C. dairy fresh butter
  • 2 ½ C. sugar
  • 4 large fresh sustainably farmed eggs
  • 1 ½ t. all natural vanilla

Set oven to 350 degrees.

Combine cocoa with water (or coffee) and stir. Set aside. Sift together flours with salt, soda, and baking powder and set aside.

Beat butter, sugar, eggs and vanilla together, then slowly begin to combine all ingredients, mixing at a low speed until blended.

Use butter or olive oil to grease 3 or 4 9-inch cake pans. For 3 layers, bake for 25-30 minutes. For 4 layers, 15-20 minutes, or until cake tester comes out batter-free from center of pan.

Cool thoroughly, then frost each layer with your favorite homemade chocolate or natural vanilla frosting.
