Some of you may know that before she opened her business in Indianapolis, Jacquie got her start as a chef in France and on several European yachts. The upscale chef experience was a wonderful learning opportunity, and it also gave Jacquie her heart-felt perspective on food sustainability.
What exactly is food sustainability?
According to Google, Food sustainability encompasses the environmental, economic, and social dimensions of food systems. In practice, achieving food sustainability involves adopting eco-friendly food preparation methods, reducing food waste, supporting local and seasonal foods, and promoting policies that integrate environmental stewardship, economic viability, and social responsibility.
Recent studies show that for every 15,000 tons of food produced in America, about one third of that will be thrown away. Amazingly wasteful.
Which is why for the past 20 years, Jacquie’s Gourmet Catering intentionally buys and prepares food from local farmers who honor organic and sustainably-sourced food practices.
“We think proactively about creating every entrée and side dish – right down to how it is served,” notes Jacquie. “We ask ourselves how we can use every part of the cut of meat, and every bit of the produce we purchase for each event. For instance, we don’t throw away odds and ends of herbs and fresh vegetables as we prepare meals. We freeze them for future use in soups and sauces.
