Korean-style BBQ is hot! Expect short ribs and thinly sliced pork belly marinated in sweet and spicy sauces.
Latin American style BBQ is also growing in popularity. Some of Chef Ruben’s favorites are and Brazilian churrasco and Argentinian asado. Guests just can’t get enough of his marinades with fresh ingredients like chimichurri, achiote, and citrus-based rubs.
Yes, we can do Plant-Based BBQ too, with fun ingredients like jackfruit, seitan, and even marinated cauliflower steaks, smoked eggplant, and stuffed peppers. These can be all be smoked or grilled, and basted with traditional BBQ sauces without sacrificing bold, smoky flavors.
Healthy BBQ is also a thing. We like smoking salmon and leaner cuts of meat, such as turkey and sauces.
Artisanal BBQ is our sweet-spot! We are loving Indy’s locally sourced BBQ sauces and rubs that emphasize regional flavors. Mustard-based or molasses-based sauces. We also do Texas-style dry rubs and seasonal blends.
BBQ pairings are no longer an afterthought. Think pickled vegetables, fermented sauces, and artisanal breads. They provide bright, tangy contrasts to the smoky richness of the our main dishes.
