When it comes to summer foods, we’re all about fresh and light!
And by fresh we mean straight-from-the-garden fresh; no-additives fresh; and sustainably grown-fresh. That’s what Jacquie’s Gourmet cuisine is all about.
This hot summer, we are loving simple main courses that are light and easy to make; easy to serve things summer-easy.
Here are some of our hot-weather favorites you can make yourself:
Grilled shrimp – toss olive oil, lemon, garlic and parsley. Grill for 2-3 minutes each side. Serve with light sides like cole slaw or grilled corn on the cob.
Chicken lettuce wraps - You can use pre-cooked rotisserie chicken, tearing it up with a fork. Add some fresh diced avocado and some light mayo and wrap in butter lettuce leaves. Yum!
Rather not cook? Here are some of our quick prep go-to’s:
Caprese Salad skewers - Cherry tomatoes, mozzarella balls, and basil straight from the garden – adding a healthy drizzle of balsamic glaze.
Watermelon & Feta Salad - Cubes of watermelon, crumbled feta, garden fresh mint. Add a squeeze of lime and voila! Lunch or side salad is ready to eat!
Greek Yogurt Parfait - Layer yogurt, summer berries and granola for a chilled snack – or breakfast
About this time of year, fat cucumbers and sunny red tomatoes are ripening with abundance. And one of our straight-from the garden passions – gazpacho – easy to make ahead!
Jacquie’s Cucumber Gazpacho
Blend in Blender until smooth and creamy (or keep it chunky if you prefer). Allow to cool thoroughly before serving.
